Preheat Oven: 400°F – 207°C
Makes 2 Large Round Loaves
1 | c. | Sourdough Starter | 250 | ml |
7 | c. | Unbleached Flour | 1.75 | l |
2½ | c. | Hot Water | 625 | ml |
2 | tbsp | Honey | 30 | ml |
¼ | c. | Light Tasting Oil | 60 | ml |
1 | tsp | Baking Soda | 5 | ml |
1 | tsp | Salt | 5 | ml |
2 | tbsp | Light Tasting Oil or Butter | 30 | ml |
¼ | c. | Cornmeal or Corn flour | 60 | ml |
Combine Starter, Honey, Water, and 5 cups of Flour in a large bowl.
Mix well, cover with a wet towel, and leave overnight.
Add remaining Flour, Oil, Salt, and Baking Soda and mix well.
Turn onto a floured surface and knead for 4 to 5 minutes.
Roll and form dough into a round loaf.
Spread 1 tbsp of Light Tasting Oil or Butter on the bottom of the skillet(s).
Sprinkle 1 tbsp Cornmeal over oil and add formed round loaf.
Brush loaf with oil and sprinkle and additional 1 tbsp Cornmeal over the top of the loaf.
Leave to rise for 2-3 hours until double in size.
Bake at 400°F – 207°C for 25-30 minutes.
